Carrot & Ginger Iced Chai
A super refreshingly zingy chai spicy drink and a great way to get some of your 5 a day from juiced carrots and apples. Carrots are loaded with vitamin A, which helps with skin health, bone growth, immune support and vision, then the ginger can reduce inflammation and support a healthy gut.
So all in all, this is an amazing drink to give you a boost that helps to ward off colds for the autumn.
Ingredients
(to make 4 drinks)
4 Tea India Ginger Chai Teabags
4 cups hot water
1 cup carrot juice about 4-5 carrots
2-inch piece fresh ginger root
½ lemon juice
2 apples
ice
slices of carrot and carrot tops for serving
Instructions
In a bowl place the tea bags and pour over 4 cups of boiling water. Leave the tea bags in for 5 minutes then remove.
Allow the tea to cool (or make the night before).
Put your carrots, ginger and apples through your juicer.
(If you don’t have a juicer place the carrots, ginger and apples in your blender and then strain through muslin making sure you squeeze as much of the liquid out as possible).
Add the juice to the cold chai ginger tea along with the lemon juice and give it a good mix.
This can be kept in the fridge up to 3 days until you are ready to drink.
Serve over ice with a slice of carrot and carrot top leaves for decoration.
