Coconut Chia Pudding

 

Chia seeds deliver a massive amount of nutrients with very few calories. These tiny little seeds are loaded with antioxidants, fibre, high in Omega 3 fatty acids and contain high-quality proteins.

Chia seeds are a superfood in every sense of the word, mix that with the amazing taste of chai tea you’re getting a magical start to your day

 

Ingredients – to make 4-5

2 Tea India coconut chai tea bags

2 cups almond milk

¼ cup cashews

1/2 tsp vanilla extract

2 tbsp maple syrup

1/2 tsp cinnamon powder

1/4 tsp grated nutmeg

1/4 cup chia seeds

for topping blueberries, cashew nuts and natural yogurt

 

Instructions

This is best done the night before so it’s all ready for you in the morning

In a heavy bottom pan, heat your milk on medium heat, once hot reduce your milk to a simmer and add your coconut chai tea bags.

Simmer for 5 minutes until the flavour has infused your milk then take off the heat, take out your tea bags and allow your chai tea to cool.

Add your chai tea, cashew nuts, vanilla, maple syrup, cinnamon and nutmeg powders to a blender and blend until smooth and creamy (approx 40-50 seconds).

Pour your creamy mixture into a bowl adding the chia seeds and mix together.

Sit your covered bowl in the fridge for one-hour mixing every now and again to stop all the seeds settling in a bunch in the bottom of the bowl before they start to soak up all the lovely tea.

Spoon the chia pudding into small glasses and leave in the fridge overnight.

In the morning serve topped with your favourite fruit, a few nuts, a spoon of full of yogurt and a cup of your favourite chai tea.
